Shipman's favorite recipes

I'm no kind of cook or chef. I'm just a recipe-follower. Here are some of the recipes I find pretty easy to follow that produce good results.

Indian

• Bengali red lentils with spices
• Butter chicken
• Chicken curry with yogurt
• Lamb with spinach (ghosht saag)
• Lentils with garlic butter (masoor daal): One of my favorite things to bring to big parties. Okay if it sits around for a few hours, and can be a fine vehicle for lots of garlic and chilies.
• Sautéed Brussels sprouts with coconut
• Sautéed sprouted mung beans with julienne ginger root
• Lamb with fragrant garlic cream sauce (rogan josh)
• Goanese hot and pungent curry (vendaloo)

Chinese

• Hunan Multiple-Spiced Chicken: A tangy cold chicken salad, good for summer.
• Tung An Chicken
• Poached fish fillets in sour sauce
• Deep-fried Smelt: A very unusual crisp appetizer.
• Don-don noodles: A cold dish, great for picnics.
• Pock-marked Ma's Bean Curd (Mapo doufu)
• Dry-fried French beans
• Smoked ham hock with hot black bean sauce
• Eggplant with chopped meat: A good bet to convert people who think they hate eggplant: don't tell them beforehand what the vegetable is.

Other

• Hunkar begendi (Turkish): Haven't tried this yet, but if it's anything like the version served by the late lamented Silk Road restaurant of Albuquerque, it should be food of the gods.
• Moussaka (Greek)
• Red chile and sugar cured bacon
